Raspberry Hemp Seed Muffins

Baked to golden perfection, these delightful treats are a burst of flavor that will surely brighten your morning. Each bite reveals juicy raspberries mingling with the crunchy goodness of Suncore Foods® Hemp Seeds, creating a fluffy texture that's simply irresistible. Trust us – one muffin may not be enough to satisfy your cravings! Make sure to start your week on a high note by treating yourself to this delicious recipe. Ingredients

1 1/4 cups all purpose flour
1 1/2 tbsp Suncore Foods® Hemp Seeds
1/2 tsp baking powder
1/2 tsp baking soda
1/3 cup sugar of choice 
1/2 cup milk of choice 
1/4 cup coconut oil or vegetable oil
1/4 cup dairy free yogurt
1 tsp vanilla bean extract
1 cup fresh raspberries

 

Directions

1. Preheat the oven to 170 celsius. Prepare the muffin pan. Set aside.


2. In a medium bowl, whisk together flour, Suncore Foods® Hemp Seeds, baking soda, baking powder and set aside. In a large bowl, combine sugar, oil, yogurt, vanilla extract and milk. 

3. Mix flour mixture to wet mixture and use a fork to combine. Gently, fold in raspberries. Scoop muffin batter into prepared muffin tins. About 3/4 full. 

4. Sprinkle each muffin with more Suncore Foods® Hemp Seeds

5. Bake at 170 celsius until muffins turn golden brown and a toothpick can be inserted and come out clean, about 25 minutes. 

6. Remove muffin tin from the oven. Let muffins cool for 5-10 minutes before serving. Enjoy!
