Pink Pitaya Rose Petal Tarts

1 cup pecans
¾ cup coconut flakes
½ cup Suncore Foods® Hemp seeds
¼ cup coconut sugar
1¼ tsp cinnamon
1 tsp vanilla
¼ tsp salt
1½ tbsp cashew butter
Pink Pitaya Filling:
1½ cup cashews, soaked in room temp water for 1-2 hours
7 oz vegan cream cheese
½ cup full fat canned coconut milk
3 tbsp agave
1½ tbsp lemon juice
1 tsp vanilla extract
¼ tsp salt
2¼ tsp Suncore Foods® Pink Pitaya Powder
1. Combine pecans, coconut flakes, Suncore Foods® Hemp Seeds, coconut sugar, cinnamon, vanilla, and salt in a food processor. Pulse until mixture comes together. Add in cashew butter and continue pulsing until well combined. Press mixture into tart pans and put in freezer for 45 min.
2. Pink Pitaya Filling — Blend everything together until smooth and creamy. Pour filling over previously frozen crusts. Freeze for a minimum of 4 hours. Let sit at room temp for 10-15 min and top with Suncore Foods® Rose Buds & Suncore Foods® Rose Petals before serving. Store leftovers in covered container in freezer.
