Pitaya Rose Tarts

For the crust:
1 cup pecans
¾ cup Suncore Foods® Toasted Coconut Chips
½ cup Suncore Foods® Hemp seeds
¼ cup coconut sugar
1¼ tsp cinnamon
1 tsp vanilla
¼ tsp salt
1½ tbsp cashew butter

For the pitaya filling:
1½ cup cashews, soaked in room temp water for 1-2 hours
7 oz vegan cream cheese
½ cup full fat canned coconut milk
3 tbsp agave
1½ tbsp lemon juice
1 tsp vanilla extract
¼ tsp salt
2¼ tsp Suncore Foods® Pitaya Supercolor Powder

1. Combine pecans, coconut flakes, hemp, coconut sugar, cinnamon, vanilla, and salt in a food processor.  Pulse until mixture comes together. Add in cashew butter and continue pulsing until well combined. Press mixture into tart pans and put in freezer for 45 min. 

2. Blend everything together until smooth and creamy. Pour filling over previously frozen crusts. Freeze for a minimum of 4 hours. Let sit at room temp for 10-15 min and top with rose petals before serving. Store leftovers in covered container in freezer.
