Pink Pitaya Chia Pudding Parfait
Get the best of both worlds with these Pink Pitaya Chia Pudding Parfaits!
Ingredients
Pink Pitaya Chia Seeds Pudding:
1 tsp Suncore Foods® Pink Pitaya Powder
1 cup plant milk
2 tbsp maple syrup
1 tsp vanilla bean extract
Toppings:
1 cup soy yogurt
½ cup granola
Pomegranates

1. In a lidded container, add milk, maple syrup, vanilla, Suncore Foods® Pink Pitaya Powder, and Suncore Foods® Black Chia Seeds.
2. Shake vigorously to mix thoroughly. Allow to sit for 10 minutes, shake jar again so the chia seeds don't stick together.
3. Allow to set at least 1 hour before serving or leave overnight to be enjoyed the next day.
4. Top with yogurt, granola, and pomegranates and enjoy!
