Matcha Marbled Cookies

Ingredients
1 cup + 2 tbsp gluten-free 1-to-1 flour
1 tsp gluten-free baking powder
A pinch salt
¼ tsp ground cardamom
½ cup sugar
2 tsp Suncore Foods® Midori Jade Matcha Powder
1 tbsp arrowroot starch
¼ cup oat milk
½ tsp vegetable oil
1 tsp pure vanilla extract
¼ cup dairy-free butter, melted
Directions
1. In a large bowl, combine flour, baking powder, salt, cardamom and sugar. Equally divide dry ingredients into 2 bowls and mix Suncore Foods® Midori Jade Matcha Powder into 1 bowl.
2. In a jar, combine arrowroot, milk and oil. Mix well to avoid starchy clumps. Set aside for 5 minutes and mix in vanilla extract and melted butter. Equally divide mixture into 2 and pour 1 part into each bowl of dry ingredients.
3. Combine ingredients in the respective bowls and form a dough ball for each dough. If the mixture is too dry, add some more milk 1 tsp at a time. If the mixture is too wet, add some more flour 1 tsp at a time.
4. Individually, tightly wrap both doughs in plastic wrap and refrigerate for 2 hours.
5. When ready to bake, preheat oven to 350 deg. F and line a baking tray with parchment paper.
6. Divide both doughs into 6-12 portions. Using your clean hands, roll each portion into small oval ropes, maintaining the width and not thinning them out. Stack 3 ropes one after the other, alternating between the two doughs. Press the formation down forming an uneven rectangle. Fold in each corner of the dough towards the centre and using a rolling pin, roll out the marble dough. The more portions of you have of both doughs, the more the marble effect will be visible.
7. Using cookie cutters, cut cookies and place them on the prepared baking tray. Bake for 10 minutes.
