Goji Berry Peach Vegan Ice Cream

These warm summer days call for something nice and refreshing! Enjoy a scoop or two of this perfect summer treat after a day at the beach, while sitting next to the pool, or during your summer picnic! It's always a good time for ice cream!

2 cans full-fat coconut milk
3-4 bags of Peach & Passion Fruit Cold Brew Iced Tea
2 tbsp Suncore Goji Berry Powder
2 ripe peaches (fresh or frozen), skin removed
¼-⅓ cup maple syrup (depending on desired sweetness)

1. Pre-cool ice cream maker.

2. In a small saucepan, heat coconut water. Add tea bags and steep for 5 minutes. Remove and press out as much as possible from tea bag into coconut milk.

3. Add infused coconut milk, goji berry powder, peaches and maple syrup to blender and blend well. Pour into ice cream maker and churn.

4. Freeze in freezer-safe container. When ready to serve, top with fresh mangos or peaches and Suncore toasted coconut.
