Canary Yellow Safflower Lemon Poppyseed Cookies

We love, love, love these bright, sunny Canary Yellow Safflower Lemon Poppyseed Cookies! Not only are the heart-shapes delightfully adorable, but the added Suncore Foods® Supercolor Powders - Canary Yellow Safflower and award-winning Red Turmeric Powder - make these cookies sing with vibrant colors and flavor! Ingredients

Cookies:
240g all purpose flour
60g powdered sugar
100g dairy free butter
15g lemon juice
30g soy milk
1 tsp lemon extract
1/4 tsp Suncore Foods® Rose Salt
1 1/2 tbsp poppy seeds

Royal Icing:
4 tbsp aquafaba
1/2 tsp cream of tartar
1 tsp lemon juice
3 cups sifted powdered sugar
2 tbsp Suncore Foods® Canary Yellow Safflower Supercolor Powder
1 tbsp Suncore Foods® Red Turmeric Powder

Directions

1. Cookies — In a large bowl add flour, powered sugar , salt and butter, mixing until combined. sugar and butter. Add in milk, lemon juice, lemon extract and poppy seeds, mix until the dough comes together. Wrap cookie dough with cling wrap and refrigerate for 20 mins.


2. Preheat oven to 170c. Roll dough out onto a piece of parchment paper and cut out the dough using a cookie cutter. Bake cookies for 10 mins. Allow cookies to cool completely.

3. Make the icing — In a stand mixer, beat aquafaba with cream of tartar and salt until foamy. Add all powdered sugar and beat on low speed until thick. Beat in supercolour powder and beat until thickened. Thin the icing with more lemon juice to the desired consistency.
